Originally founded in Aurora, Las Fajitas has grown through the passion of the Granados family, who are proud to now serve the Castle Pines, Castle Rock, and Littleton communities. Born in Jerecuaro, Guanajuato, a region in central Mexico rich in culinary diversity, the Granados family brings together flavors from across Mexico, crafting a menu that celebrates tradition, quality, and family values.
